Things I'm looking forward to this summer

School is almost over! Sure, I'll miss my friends, but I LOVE SUMMER. I'm a summer baby. My birthday is August 26th. I like the heat and I LOVE the water. I also love having a million play dates and VACATION! We don't really have a lot of plans, but here are some of the things I'm looking forward to this summer.

I am looking forward to going to the pool at least every day. Jumping on the trampoline with my friends. It's even better when it's wet! I'll get to ride on my toy cars whenever I want, and I can have friends over to ride with me. OH! I'll be traveling this summer. I'm going to go see my aunt Helene, my uncle Stan, and my cousin Olympia in Maine. We're going to have so much fun. 

It get's better though. This summer I will be going to sleep away camp FOR THE FIRST TIME EVER. I feel kind of nervous but really excited because one of my friends might come. I'm really happy to meet new friends and I'm really going to miss my parents. I know they'll be there when I get back. If not, I know they're at work. If they're not at work then it will just be a suspenseful situation. 

I'm playing soccer this summer. Well I'm not really sure if it's in summer but if it's not it doesn't matter anyway. Just know that I'm playing soccer soon and I'm really good. I'm sad because it's my last summer with my babysitter, but I'm happy we'll be spending more time together. Between day camps, trips and mini adventures I'm going to be a busy girl.

Bluzeberry Moofins

I've gotten so many cookbooks as gifts the past 2 years because my friends and family know I LOVE to cook. So today I'm going to show you how to make one of my favorites, blueberry muffins, or as I like to call them... Bluzeberry Moofins. They are cooler that way.

Here's what you'll need

  • 4 tbs unsalted butter
  • 2 cups self-rising flour
  • 1 tsp baking powder
  • 1/4 cup superfine sugar
  • finely grated zest of 1 lemon (optional)
  • 1 cup of plain yogurt
  • 2 large eggs, lightly beaten
  • 9oz (250g) blueberries 
  • mixing bowl
  • sieve
  • wooden spoon
  • 2 soup spoons
  • 12-cup muffin pan and paper liners

Step One

Preheat the oven to 400 degrees Fahrenheit or 200 degrees Celcius. Line your 12-cup muffin pan with paper liners. I prefer colorful liners or liners with cool designs on them. Melt the butter in a pan, then set aside to cool. Sift the flour into a bowl, and mix in the baking powder, sugar, and lemon zest.

Step Two

Make a well in the center of the flour. Mix the yogurt, eggs, and cooled melted butter together in a large bowl, then pour into the dry ingredients.

Step Three

Add the blueberries. Mix until just combined, but don't overmix or the muffins will be heavy and gross.

Step Four

Spoon evenly into the paper liners and bake for 20 minutes, or until golden brown and springy. Cool the pan for 5 minutes.
